Ingredients

  • 1 cup cornmeal

  • 1/2 cup oat flour

  • 2 tablespoons of DIY Sweetener (to taste)

  • 2 teaspoons of baking powder

  • 1/2 teaspoon of salt

  • 3/4 cup unsweetened almond milk

  • 1/4 cup nonfat Greek yogurt (this replaces the butter!)

  • 2 egg whites (or 1 whole eff if needed for structure)

  • 1 tablespoon applesauce (adds moisture without fat)

This comes together quickly—just mix, pour, and bake.

Instructions

  1. Preheat oven to 400F

  2. Mix all dry ingredients in a bowl.

  3. In another bowl, whisk wet ingredients until smooth.

  4. Combine wet and dry ingredients - don't overmix.

  5. Pour into a lightly sprayed skillet.

  6. Back at 18-22 minutes, until golden and set.

  7. Let cool slightly before slicing.
